In-line fuel filter

I have an in line fuel filter on my bike. Perhaps because I live in Miami. I never have to use my choke down here. What happens to me is a condesation build up in the tank which causes the bike to die on me. I just try to keep exit spaces open to me when riding and the bike dies. Usually it occurs to me going at about 60- 70 mph. I just pull over crank the bike and it gets going again. One time I did have to drain the carburator(that was prior to cleaning and coating my tank) that no longer occurs. Sometimes I'm able to start up the bike again as I'm coasting over to shoulder of the road. Just wanted to share my wierd experience perhaps someone else can help.
